Food Ecosystem: Enhancing the Food Experience at ISEG Campus

Resumo
The primary aim of this study is to assess current eating practices and needs regarding food options at ISEG. To understand the role of ISEG’s quick meal space a questionnaire was conducted with a global sample of 208 respondents, including 95 from the ISEG community. The findings revealed that students base their food decision-making on five main factors, namely acceptability, accessibility, adequacy, affordability, and automation. The factors that are more relevant in a restructuring of ISEG’s quick meal space are acceptability and nutrient load (adequacy). Overall, this study contributes to a better understanding of the importance of good nutrition in students in a period of transition to adulthood. With special importance to the options available and the level of student satisfaction in a learning space such as ISEG. Furthermore, the study showed that students are dissatisfied with the food options provided, with a particular focus on Entr’aulas. The main objective of the Entr’aulas restructuring is to provide ISEG students with a more enjoyable and practical university experience while allowing them to maintain a healthy diet, through the provision of higher quality and more varied food options, contributing to a healthier campus environment.
